Thai red curry

It's all too easy to pick up the phone and order a takeaway, but it's even easier to make this Thai red curry yourself. This is one of the most popular dishes from Thailand and is less spicy than Thai green curry, though people often assume it's the other way around. The truth is, Thai green chillies pack more of a punch. Swap the chicken out for tofu or tempeh to make this vegan (just check the label on your curry paste to make sure it's vegan too) or add a lot more veggies in the place of the meat. This recipe does not require fresh chillies but feel free to add them in yourself if you want to dial up the heat, or use them as a garnish.
