Cod cooked en papillote, ratatouille & soft polenta

Fish cooked "en papillote" is a favourite at home. It ensures consistency as well as the introduction of so much flavour. Texturally, it is also a really great way to cook fish and equally, the ratatouille marries the flavours both ways. The fish takes on the flavour of the ratatouille, and the ratatouille that of the fish. Polenta is also a personal favourite. All in all it is such a homely dish with really hearty, comforting flavours. It's also a very easy option when cooking for lots of people as you can prepare all of the fish in their parcels ahead of time. This recipe uses cod, but you can also use the likes of hake.
